Healthy chocolate crackle slice

this slice dairy free, gluten-free and refined sugar-free. It is great for lunch boxes or even those late night chocolate cravings… they will take you back to you days as a kid at birthday parties eating chocolate crackles.

For this recipe you will need…
3 cups puffed rice – if you buy the no added sugar rice puffs make sure they are crispy like rice bubbles so that the slice doesn’t go soggy.
1 cup puffed amaranth
1 cup desiccated coconut
1/4 cup chia seeds
1/4 cup coconut sugar
1/2 cup coconut oil
1  1/2 cups rice malt syrup
1/4 cup cacao powder

you can substitute the rice malt syrup with honey and leave out the coconut sugar… it will be a lot sweeter with honey so maybe cut down to 1 1/4 cups and see how it goes.

Mix puffed rice, chia seeds and puffed amaranth in a bowl. Melt the coconut oil and add the rice malt syrup, coconut sugar and cacao powder until combined then add to the dry ingredients and mix well.
Press into a lined slice pan ( I use my Tupperware containers as this is what it goes back into to be stored)Put some baking paper over the top and use to press down firmly and smooth the top.

Put into the fridge until it is firm then cut into slices….. i cut mine about 1 ” x 2″ and found they are big enough ( they are about an inch thick )
